Tips and tricks on how to make Dolmathakia

The egg/lemon sauce plays an important role in dolmathakia. To have more sauce, simply use more water than what the recipe specifies. To bring this recipe up a notch you may replace the water with chicken or beef stock. To thicken the sauce slightly you may use some cornstarch in the egg/lemon sauce, as shown in the videos below.

Recipe instructions

    • Mince the onions in a food processor.
    • Place vine leaves in pot of boiling water for a few minutes, to cleanse the leaves from any bacteria.
    • Remove from water and place in a colander.
    • Repeat procedure for the remaining vine leaves.
    • Next we'll add all ingredients specified in the recipe into the minced meat. Mix well.
    • Place some vine leaves at the bottom of the pot, to prevent the stuffed vine leaves from sticking.
    • Add about a tablespoon of the minced meat mixture, and roll the vine leave, as shown in the video.
    • Add any remaining grape vine leaves on top, as shown in the video.
    • To prevent the dolmathakia from braking up during cooking, place a plate on top, for extra weight, as shown in the video.
    • Cook at medium heat for about 50 minutes with the pot covered. Stir occasionally.
    • Turn off the heat, and take some of the hot juices from the pot, to gradually bring up the temperature of the egg/lemon sauce so that the eggs will not coagulate (See FREE Greek egg/lemon sauce video).
    • Mix the eggs well and add the lemon juice.
    • While mixing continuously, add gradually the hot liquid into the egg/lemon mixture.
    • Gradually pour tempered egg/lemon sauce over dolmathakia and shake the pot to distribute evenly. If you wish to have more sauce, simply add more water than what is specified in the recipe.
