Question. What is Dolmathakia?
Answer. Dolmathakia is a minced meat mixture wrapped in grapevine leaves in greek lemon sauce. When grapevine leaves are not in season you can get them at any greek grocery store.
Tips and tricks on how to make Dolmathakia
The egg/lemon sauce plays an important role in dolmathakia. To have more sauce, simply use more water than what the recipe specifies. To bring this recipe up a notch you may replace the water with chicken or beef stock. To thicken the sauce slightly you may use some cornstarch in the egg/lemon sauce, as shown in the videos below.
- Mince the onions in a food processor.
- Place vine leaves in pot of boiling water for a few minutes, to cleanse the leaves from any bacteria.
- Remove from water and place in a colander.
- Repeat procedure for the remaining vine leaves.
- Next we'll add all ingredients specified in the recipe into the minced meat. Mix well.
- Place some vine leaves at the bottom of the pot, to prevent the stuffed vine leaves from sticking.
- Add about a tablespoon of the minced meat mixture, and roll the vine leave, as shown in the video.
- Add any remaining grape vine leaves on top, as shown in the video.
- To prevent the dolmathakia from braking up during cooking, place a plate on top, for extra weight, as shown in the video.
- Cook at medium heat for about 50 minutes with the pot covered. Stir occasionally.
- Turn off the heat, and take some of the hot juices from the pot, to gradually bring up the temperature of the egg/lemon sauce so that the eggs will not coagulate (See FREE Greek egg/lemon sauce video).
- Mix the eggs well and add the lemon juice.
- While mixing continuously, add gradually the hot liquid into the egg/lemon mixture.
- Gradually pour tempered egg/lemon sauce over dolmathakia and shake the pot to distribute evenly. If you wish to have more sauce, simply add more water than what is specified in the recipe.
