Answer.   Stafili glyko is a traditional spoon dessert made from grapes, (just like Kithoni; quince preserves) that is traditionally offered to guests. It is a bit time-consuming to prepare, but can be preserved and enjoyed all throughout the year.

Tips, tricks and info on how to make Stafili glyko

The season to purchase these small, seedless white grapes is around September to mid October. In Greece the type of grapes used for this grape preserve are called 'Soulfamitha'.

The success of this and all other preserves comes from the perfect balance between the fruit, sugar, and water. The grapes must be cooked in a perfectly balanced sugar/water mixture in order to reach a perfect syropy consistency. If not, you may run into problems like, syrop not thickening, etc.

Recipe directions

  • The first step is to thoroughly wash the grapes.
  • Once washed, place the grapes in a pot and add the water and sugar.
  • Set heat to high to quickly bring to a boil.
  • At the 20 minute mark, shut off the heat.
  • Place cover on, and allow to rest at room temperature for 12 hours.
  • If you did the first boil at 9:00am you will repeat this same procedure again at 9:00pm (after 12 hours)
  • At the 20 minute mark, shut off the heat.
  • Place cover on, and allow to rest at room temperature for 12 hours, for a second time.
  • The next day (after 24 hours, at 9:00am) turn heat to high to quickly bring to a boil, for the 3rd time.
  • Once boiling begins, lower the temperature to maintain a medium simmer, as shown.
  • After 20 minutes of boiling add the flavorings and the glucose.
  • Continue boiling another 35 minutes (total boiling time; 1 hour) and this is the syrop consistency that you should have, later in the day once cooled.
  • Once the grape preserves have cooled, you can now store them in a glass container.
